Hi James. Unfortunately one lapel microphone can be used per Sony Hybrid Digital Lavalier Wireless Mic System. You can only hear one transmitter on each receiver.
The Sennheiser SKP 100 G3-B Plug-On Transmitter does not supply 48V Phantom power. You would need to either use a Shotgun mic with a battery like the Rode NTG-2 or Rode NTG-4+ or get a plug pack transmitter which does and is compatible with your Sennheiser Evolution 100 system like the SKP 300 G3-B (make sure that you choose the correct frequency range) $645 inc GST. Yes, the Rode NTG4+ can get phantom power from being connected to a camera or pre-amp. The phantom power does not charge the included internal lithium ion battery. The Battery can be charged in two hours, and last for up to 150 hours, via the included MicroUSB cable, which can be connected to any USB port.

The input sensitivity on the Sennheiser EW100ENGG3B transmitter can be set to line level. The output level of the receiver is mic level, so you will need a mic pre amp at the speaker end. They are not designed for this purpose and I can’t comment on how they would perform.

In theory the quality of sound recorded is not app dependent, however Rode have a specific App that definitely supports the Rode VideoMic Me.
Often when using a Rode VideoMic Me mic to record to the phone, there is interference from the phone signal itself. When recording audio, try setting the phone to aeroplane mode, as this often solves this issue.
